Welcome to issue #2 of the Quickies newsletter. Thanks for bearing with me a bit, as I figure out exactly the format, and what I want to do with this.

I promised 5 quick dinner ideas, and a shopping list. I've made a shopping list for each recipe individually - or if you'd like to make them all, I've made a master shopping list that you'll find at the bottom. Feel free to send me your comments/suggestions both positive and negative. This newsletter is a bit of trial and error to see what works.

Your shopping list for individual recipes are as follows:

Mom's Meatloaf

* 2 lb. Ground Beef * 1/2 onion chopped (1 whole if it's a small onion)

*optional-my sister adds a chopped bell pepper too

* 1 small can of tomato sauce

* 1 1/2 cups of oatmeal or bread crumbs (I use both and there isn't any difference in the taste)

* 1/2 cup of water

* 2 eggs

* Salt and pepper to your taste

Crock Pot Beef Fajitas

* Rub a 3-4 lb. roast with chili powder (both sides)

* 1 chopped onion

* 2 cups uncooked red beans

* 2 cans Rotel

* 1 can Cream of Mushroom Soup

* l can chopped green chilies

* 1/2 tsp. oregano

* 2 tsp. salt

* 1 cup water

Easy Sour Cream Chicken Enchiladas

* 1 box chicken taquitos (from the freezer section)

* 12 oz. sour cream

* 1 small can of chopped green chilies (2 if you love more flavor)

* 1 can cream of mushroom soup

* 1 can cream of chicken soup

* Mexican blend shredded cheese (or whatever you have handy)

Swedish Chicken Breasts

* 8 boneless chicken breasts (fresh or thawed, never frozen)

* 8 slices bacon

* 2 - 10.75 oz cans cream of mushroom soup

* 1 - 16 oz carton sour cream

Parmesan Baked Tilapia with Zucchini

* 6 - 4 oz. tilapia fillet (any mild fish will work)

* 2-3 zucchini squash, sliced or cut into smaller pieces

* 1/8 cup lime or lemon juice (I used lime)

* 3/4 cup grated parmesan cheese

* 4 tablespoons of Butter room temperature

* 4 tablespoons mayonnaise

* 4 tablespoons finely chopped green onions

* 1/2 teaspoon seasoning salt

* 1/2 teaspoon dried basil

* Black pepper (preferably fresh ground) to taste
