Microwave Peanut Patties

My mom makes these every year as part of her Christmas candy making tradition.

Ingredients for Microwave Peanut Patties

  • 2 cups sugar
  • 1/2 cup water
  • dash salt
  • 1/2 cup light corn syrup
  • 1 1/2 cups raw peanuts
  • 2 Tbs. butter
  • 1 tsp. vanilla
  • 2-3 drops red food coloring
  • Candy thermometer

Directions:

Combine sugar, water, salt, and syrup in a 2 quart glass

measuring cup. Bring to a boil in the microwave (approximately

3 minutes). Stir and add peanuts. Return to microwave and cook

until soft ball stage (234 degrees) is reached (approximately 11

minutes). Remove from microwave, add butter, vanilla, and food

coloring. Stir until bubbly, and creamy, and it loses it's

gloss. Spoon out quickly on waxed paper or foil. If you spoon

out too soon, without stirring enough, the patties will be

sticky and will not set up. If you stir too long, they will

become hard and dry. Practice makes perfect.
