Lazy Lasagna with Meat Sauce

Need an easy dinner idea for tonight? No need to look through countless lasagna recipes, here is a delicious Lazy Lasagna with meat sauce. This recipe is easy, and tastes great, too.

Ingredients:

  • 1 1/2 pounds ground beef cooked with 1 small chopped onion *
  • 1 28 oz. can diced tomatoes (or 2 smaller cans 15 oz)
  • 1 15 oz can tomato sauce (or 2 8 oz cans)
  • 2 envelopes dry spaghetti sauce mix (McCormick's thick and zesty dry spaghetti mix is the only way to go in my opinion)
  • 2 tablespoons of minced garlic from the jar (or mince 2-3 cloves yourself)
  • 8 oz. lasagna noodles (comes in 15 oz package, but you won't need them all)
  • 16 oz. mozzarella cheese
  • 2 cup cream style cottage cheese

Directions:

  1. Brown meat with onion and drain. * (see note below) Add tomatoes, tomato sauces, spaghetti sauce mix, and garlic. Cover and simmer 15 minutes, stirring occasionally. Salt to taste.

  3. Don't cook noodles (it's really not necessary - I've tried it both ways - and I'm not going to dirty a pot if I don't have to.) Place half of the noodles in an oblong baking dish and cover with half of the sauce, half of the mozzarella cheese and cottage cheese.
  4. Repeat layers. Top with thin layer of mozzarella cheese.

    Bake at 350 degrees for 30 minutes. Enjoy this easy lasagna recipe!
  5. * Note: I always keep precooked ground meat with onion in my freezer for all of the ground meat recipes. This will save you TONS of time in the evening. I can't stress this enough. I buy a 5 pound roll of hamburger meat at the grocery store, then I bring it home and chop up 2-3 medium onions in a food processor and combine this in a large stock pot! It will take a while to cook, but it's so worth it. Stir and break up until fully cooked, then drain, and divide into three (or four) quart sized freezer ziploc bags. Lay flat to freeze. Simply stick a bag in the fridge the night before, and instant cooked meat for any dish or any casserole. Thanks Mom - this is a lifesaver!
